A friend living in Roma (Italian born, US Citizen, just back in Roma) went with his family to a Parmigiano Reggiano maker just outside Parma and said it was a very good (not cheesy - forgive the pun) tour. As it's close to our Italy house (less than an hour) we'll probably hit it sometime. Parma is more than 2 hours from Roma but you could also bundle in a tour of a Prosciutto di Parma factory. And, of course, the Ferrari and Lambo museums are relatively close by if cars hold any interest for you.
