I was on Finnair recently between LHR-HEL and it was operated by an A350 with the nice J seats. How much of an anomaly is it to find intra-Europe on a widebody with true J seats? Like OP, I'm used to the standard Y seats with the middle blocked and that's it.
If you look at for example Flight Connections you can select aircraft type as well, if you'd like to have an overview.
Ofc aircraft changes happen but it does vastly increase the odds
