It's an internal designation - AMS has some concourses that are stacked such that they can handle both Schengen and non-Schengen gates. Z refers to the D concourse but a non-Schengen gate.
It's the same as to how they refer to arrival gates at LHR to be 3xx, with the arrival gate being the stand number and departure the gate number.
