The LAX FL buffet still has hot & cold dishes at 23:30/midnight. It's a reduced buffet but they refreshed a couple of dishes when I was there at that hour a couple of weeks ago, arriving from DFW. It's pretty quiet at that hour, but you won't go hungry. Champagne/Wine/Full bar still out also.

I think the breakfast to lunch switch is around 11am, and then it's an all day menu.
