I don't stay at Hyatt as often as other brands but if I have a specific need I call in advance. Often times we book 2x 1 bedroom at a residence inn or Homewood suites so the 6 of us have 4 different places to sleep. I'll often ask that we get neighboring rooms or rooms across the hall (booked at p1 and p2 so it otherwise won't be know to them). Typically this is assigned correctly automatically.

I have had luck with higher end hotels explaining it's an anniversary and a surprise trip for my wife so I'd like it to be special. I always give real information just in case they question. Often days in advance

One time I called the Conrad midtown and told them how my daughter was turning 3 and she specifically asked to stay at that hotel, any chance we can get the 1 bedroom. This was 7 days in advance. They agreed and left the stuffed animal with a balloon on the pull out. Was a really nice touch and she was so excited
