I don't believe you have to leave the security since intra-terminal trains are provided or you can even do it by walking. I never find transitting at IAH any harder than any other big airports. I would recommend having 1.5 hours for a transit (both domestic and international) to ensure you don't have to run or walk fast. Anything less than one hour requires RUNNING !!!
