Just to make sure : what do you mean by "flying on AM ticket stock" ? If you mean flying on AM-coded flight (even if AF-operated), then they were correct. If you mean your ticket has been issued on AM plate but you are booked under AF flight numbers, then they were wrong.

Everything is clearly explained in the wiki. The basic requirement is to be booked under AFKL flight numbers, whatever the metal operating the flight. But this is mostly true for UXP earnings and most hard benefits. For soft benefits, it clearly depends where you fly from. For instance if you fly CDG-CVG DL-operated but AF-coded, you will be able to enjoy the escort through passport control and benefits at the lounge because it's an AF lounge. But for the return flight, from CVG, you won't have any benefit at check-in, lounge, etc as everything is handled by DL.

Again, it depends what OP meant for "ticket stock" as I have seen many posters on FT using improperly this term.
The ticket stock indeed doesn't matter and should not matter. The only thing that should matter is the marketing carrier of the flight booked.

Ultilmate, like most of those top tier status are designed to favor flying with the airline corresponding to this status. If you fly with other airlines of the alliance, you are still recognized as an Elite+ pax which gives you already the most important benefits (SkyP, lounge access, etc), but you don't get the extra perks.
