It's true, I'm not sure why they've always called out the LAS routes other than to highlight product differentiation for those who have no idea how far away places are.
AS does put the following disclaimer on its website:
Informational notice. Flights to and from Nevada, Arizona, New Mexico and Colorado offer an amended food and beverage selection, with fewer and/or no inflight services due to the high probability of turbulence.
I'm not sure why AS and its regional partners are unable to do a full food and beverage service to/from those states when other airlines do. I've flown many flights to/from LAS and while there can be a bit of chop near LAS, it's typically possible to do a full drink and snack service on pretty much anything except flights between LAS and SoCal (LAS-PSP can often have light chop the entire 150nm flight) or maybe PHX.
