If you give us some examples of small towns you have in mind, we can probably come up with some suggestions. Back when the Lonely Planet was a thing, it was an awesome resource, but I gather it doesn't really do hotels anymore (attractions might be a different story).
The place which draws me is called ZhongChuan (literally "centre/middle river" - I can read that much) in YongDing, Fujian, pretty much due west of Xiamen. Hotels are in adjacent下洋镇 (I know is low/under, but not familiar with the next words which I take means "ocean town").
Lonely Planet online just has a line.
