I don't know if these work for Italy-purchased goods.
You arrive in CDG from a "domestic" flight so you have access to the same machines as those originating in Paris.
You are either very lucky or not detaxing big ticket items. It is normal for higher value receipts to be rejected by the PABLO reader and you are instructed to show the item to customs and get a hand stamp. (I even had a VAT form for a case of wine rejected because the wine was in my already checked-in luggage and not with me.)

There are no PABLO readers airside in 2E or 2F. It would be a complete hassle to come landside on a transit just to stamp a form. It can be a hassle even on a direct departure. The lines can be long. And woe is you if you have someone(s) in front of you who did not organize their receipts beforehand, pulling 20 individual forms out of their envelopes one-by-one to scan. 😭
