We will be staying in the Roma Norte section. Seems like 30-40 minutes is safe amount of time to get to T2.

Also I will have access to the two lounges via Priority Pass. Either one better than the other? Or since it is a domestic flight, can I only get into the Nacional one?

Unless the sun hasn't yet risen, I allow 2 hours to get to MEX, although with limited exception, it has rarely taken more than an hour, and frequently, no more than 45 minutes. I'm not one to cut things close, and I've been stuck on an "unlucky block of traffic" before, where it can take 20 minutes to get through a single light. I'd be hailing my ride at about 7am. Figure that the AM check-in agents are extra diligent with verifying docs (especially Visas) for US-bound travelers, so sometimes molasses runs faster than the check-in line. Security is annoying but usually pretty quick.

Note that T2 (and T1) are set up like US airports - no sterile international sections, so national and international flights are mixed throughout. One PP lounge remains @ T2, and it is out by where most of the National flights depart. I don't know if STE+ status gets you into the one open AM lounge - the Heineken Terraza, also out by where most national flights depart.

As you can tell, my favo(u)rite airport.
