A long overdue option has recently been added to the OLCI flow on the app:
Spoiler

It used to drive me nuts now long it took to add BPs for each person on the PNR, even which it was just two. So that's positive.

On the other hand, I also recently discovered that the "add boarding pass" function doesn't work if you're past the check in deadline. Even though the app knows you've already checked in. This is definitely a flaw, because there should be nothing preventing you from generating a BP. Of course, if the app just generated the BP automatically when you were checked in on another device, this wouldn't matter, but the easier solution is just to let you fetch it yourself despite the deadline being past.

Instead, you need to enter 8 digits - in the correct order. It's dd/mm/yyyy. Or maybe it's mm/dd/yyyy. Who knows. Since my both my birth "dd" and my passport expiry "dd" are low number (i.e. in the first few days of the month, so less than 12) it's so easy to get the day and month mixed up. Again, nobody else does it this way -- because it's not user friendly.
I agree with your overall point that it would be nice if WS could (safely and securely) store this data so it didn't need to be re-entered all the time. But I disagree about the inputs. I don't want to have to screw around with paging through a calendar to get to the 2030s when my passport expires, or the several decades ago that I was born. I would much rather type something like 2030-01-01 or whatever, and the app does tell you which format the dates are in before you start typing them in.

I suspect this is less of a focus for WS since they want people to use that stupid Zamna widget to auto-populate and verify, which I tried many times and eventually gave up on. Which circles back around to the storage issue. They're not the only ones whose in-app verification is finicky, but at least with AA (whose verification I found incredibly annoying) or UA, you can store the document so that you don't have to scan the thing each time you travel.
