There are not that many luxury ryokans with Teppanyaki options, especially compared to properties that offer fusion cuisine. Top ryokans with Teppanyaki tend to be clustered in the Kanto region (Fufu Nikko, Hakone Suishoen, Kinugawa Kanaya Hotel, etc.)

Specifically in Southern Japan & Kyushu, Sanso Kannawaen in Beppu has Teppanyaki in their "Kaede" restaurant. Guests at Bettei Otozure can avail themselves to Teppanyaki dining in sister property Otani Sanso. Garden Terrace Nagasaki is a hotel rather than a ryokan but has an excellent Teppanyaki restaurant on site.
