Question - change of citizenship from one GE eligible country to another

Just had a question about changing my Global Entry citizenship details: I'm going to become a British citizen shortly from an Indian one. I currently have a US visa and Global Entry since several years, but will need to give up my Indian passport within three months of obtaining the British one. I am planning to travel to the US about a month after obtaining a British passport (so still within the Indian passport validity).
I read that updating citizenship details is usually done in person, which is fine. Hence, I was planning to enter the US on my Indian passport using GE, and then approaching an officer to advise them to change the details to the British one. My question is, do I need to get an ESTA in advance of travelling, since the British passport won't have that yet? One of the criteria for ESTA is that I should not have a physical visa, which I currently do but on the Indian passport.
Also, am I correct in understanding that this will effectively 'bypass' the British GE application process?
