I'm not sure what the Dutch's Food and Safety Hygiene regulations are, but I believe in many countries a mouse sighting (or a report of) in food-serving premises can be enough to force the establishment's temporary closure until the issue is resolved.

So if a feline solution is not feasible, then the correct procedures should be followed as per the country's regulation in this subject to prevent such occurrences in the future.
