If I can apply my Amb cert at the IC will definitely move that stay to the IC, and then for my overnighter at the end of my trip will either keep the HI (have booked a King Suite for that one night as looks nice, standard room for the 3 nights at the start) or if I find I really like the area from the first stay might try the Indigo or Vignette

Can recommend Maido - fantastic food - you definitiely need a reservation. Have been to Central as well - food was absolutely not my taste (but you go there for the experience).
Location of IC is nice for the view and the close Larcomar, however based on location I would rather stay the most part of a LIM layover at the Crowne Plaza or Holiday Inn - but would like to try the Intercontinental as well. CP/HI are more centrally located in Miraflores. Parque Kenedy and Parque 7 de Junio are very close to CP and HI - from the IC you walk there in around 20 minutes.
Don't forget an evening at the Circuito Magico del Agua.
And a warning - be cautious with using your smartphone in the city center. My iPhone was snatched out of my hand by someone on a motorbike - this is a common crime in Lima now - just like in London.
