Just a heads up - staying overnight at HND (Haneda) can be a bit tricky. The airport actually closes between midnight and around 5am, and they'll usually ask passengers to leave the secure area.

I don't think any other shops are open 24/7 airside other than the transit hotel, and one or some of the duty free outlets. Some of restaurants/cafes are open to 0100-0200 for departures if that is helpful.
