Not sure how current this information is but prepaid data is far more expensive in NZ than Australia apparently.

So that site says to consider eSIMs from a global provider like Airalo, Ubigi, Holly.

I haven't been to NZ since 2019 but I've been to Mt. Cook, Taupo, relying on GPS and mobile data.

Though to be fair, maybe I had coverage when I started some routes but didn't have coverage all the way through the drive, which can be 4 hours or more as you can drive over 200 kilometers to get to some locations.

I'm not sure if Waze lets you download maps in advance? But you want real-time traffic, chances are, when you get out to remote areas where coverage may be iffy, you're not likely to have a lot of traffic or for that matter, many Waze users giving feedback.
