HR Tahoe is the best. Right on Lake Tahoe with a private beach! Unfortunately doing renovation this summer.

GH Indian Wells is the ultimate family resort. It is overrun with kids during holidays and weekends, which would be a good thing for the OP. But it is a hectic place. Usually ping pong tables at these upscale resorts are unoccupied half the time. Af this place, they have two and both are seemingly always being used. The hotel puts together all sorts of activities for kids/families.

GH/HR Scottsdale Gainey Ranch has the more extensive pool area. It is massive. I have not stayed since its HR days. If the manmade beach is still
there, then that is a really cool feature. It is my favorite resort in the Phoenix area as far as pools go. If Phoenix interests you, I would choose this over Indian Wells.

Summer will be hot at the above two desert properties, but i actually think one will be more likely to be able to enjoy the pools during summer than winter.

GH Vail is also mentioned upthread. Very family friendly. I have only stayed during ski seasons but it is another place that’s overrun with kids. I have seen a bunch of unaccompanied junior high kids taking up a table in the bar section of gessner which I cannot believe.They have a game room with Nintendo and foosball. Pool area is very small. They have daily family activities such as free smores.
