As a follow up, I called the property and they told me that if the destination fee doesn't show up in the booking for a particular rate, then you will not be charged the destination fee. However, I also called the regular Hyatt line - they gave me the standard "we only waive destination fees for globalists on points bookings", which runs counter to what the property told me (to the extent this is even considered waiving a destination fee when the property simply is not charging it when booking certain rates).
I'm still a little suspect so I may test this with a 1 night stay before committing to anything longer. I'll report back.
I think there are some rates that waives destination fee. For example, my corp rate waives destination fee at HR Huntington and it doesn't show up during booking.
