Specifically because many airlines fall back to "water or orange juice" when that's the case, which is shameful. While I think that paying tax for champagne should not be a problem when you're charging 10000+ for a return ticket, I think there are ways to provide a good pre-departure service without it. TK (in J of course) comes to mind - there's no alcohol but they can put up a nice selection of non alcoholic drinks (juices/lemonades) and then I don't care all that much.
Just give me a Cathay Delight in moments like these.
However the TK juices and lemonade are nice. They are absolutely better than the juices I just had on CI and JX.
