Whichever you want to be at - both are great hotels. One is in Northern CA, one is in Japan...

I haven't been to Ventana for ~2 years now (was supposed to be there last year but road collapsed 1 week before my stay), but it is one of my favorite chain hotels in continental US given the location (Big Sur is beautiful). Park Hyatt Kyoto is a stunning hotel in Kyoto, but it's Kyoto so you have to decide if you want to be there

Don't think I'd build a major trip around using 1 night at either of these tbh
