I haven’t flown the OGG-DFW route personally, but menu should be the same.
The menu is usually rotated between beef filet/tenderloin, bbq chicken, seabass, shrimp/grits, vegetarian pasta option.
Rotating local salad dressing: Maui onion vinaigrette or a lillikoi honey mustardish one.
AA announced a new Hawaiian route menu that was suppose to come out, but I haven’t seen it yet.
FYI: You’ll have access to flagship lounge at DFW upon arrival, I would recommend skipping breakfast on flight to maximize sleep and to just get breakfast at the Flagship lounge as it is much better.

thanks for the detailed response, the flagship meals sound way better than the cobb sandwich and chips we got last time in PE, also the option of skipping breakfast was my plan as we have a 4 hr layover at DFW so the FL spread looks way better.
