The restaurant size is at least triple the size of the lounge.
It would be impossible to fit all that food offerings on just one or two tables.
Although it's basically impossible for a lounge to have more choice than the main restaurant as you highlighted,
some lounges provide a better experience overall by offering additional a la carte menu options, better quality of ingredients and further menu items not available in the main restaurant. Lounges should also have the time and staffing to offer a better level of service, as well as a more peaceful environment over the (often) chaotic mess at the main restaurant.
That said, I don't think Conrad Seoul has ever been known for the quality of their lounge offering, so they will have a lot of work to do if they want to live up to their goal. Looking forward to the feedback on how they did.
