It's UHT from concentrate juice, the same used in all cabins except First. Currently it's actually a blend of clementine and orange due to a worldwide shortage of orange juice and corresponding cost increase – if you're not expecting it the slightly different taste can be jarring at first. It does need to be properly shaken before pouring, as otherwise it can end up tasting like the watered down hotel breakfast buffet juice you allude to.
