Looks rather like the apple was "frozen" perhaps the meal having staid in a container outside with cold temperatures to have this effect upon being again at a warmer temperature.
Not to praise LH EU catering (captive market) while feasting on TP's (hot) meals

with delicious Portuguese wines from sparkling to white and red. Had recently delicious lamb chops and even the chicken was nice.
