The special champagne is usually limited to certain routes which can also change, normally it is mentioned on the menu.
I've had the Veuve Cliquot Grand Dame + Rose version of the same on my CDG-TPE flight which was a lucky coincidence. When I flew TPE-VIE we also got Duval Leroy (standard offering) and the special champagne (don't recall which one) at that time was offered on JFK and MUC flights. Along those lines...
