My most recent experience is from just before covid and typically I flew on CM in the afternoon, but UIO is a newer modern airport, and every time I flew out of there security and immigration were relatively efficient. I wouldn't worry about 2 hrs. There aren't taxes to pay. I don't recall priority lines for security, but I never experienced any lines or delays of note.
Thanks very much for the reply. Reporting for the benefit of future travelers, I arrived curbside at 4:35 am and was sitting in the lounge by 5:00 am. I don’t think it would have been much longer if I had been in the regular “main cabin” line — everything was very efficient as noted above, though YMMV. Confirming that there are not priority lines for security (unless you have mobility issues) but there was no need at this hour of the morning. Also, the Sala VIP lounge is accessible if you have Priority Pass, and possibly for a fee otherwise. Nice variety of hot breakfast items!

ETA: this was on a Tuesday morning; I don’t know if weekends are more crowded.
