Indeed, if you're doing BHX-CDG-DXB round trip each month in J on AF/KL flight numbers, then you'd be at 78 UXP for the trip. That'd be a total of 936 UXP, which is, indeed enough to renew Ulti.

I don't know of people actually asking for special treatment, but many outstation airports will, during check-in, propose an escort through security and/or immigration on their own. They might even offer pre-boarding on their own. If they don't, at least I personally ask about how they prefer to do pre-boarding. Some of them, at that point will ask me to turn up at the gate a few minutes before boarding and just identify myself, others have offered to send someone to the lounge. But I don't think any Ulti is walking up and asking for escorts through security and stuff, only that some airports are doing it on their own.

For partners, it only appears as STE+, so you're basically the same as a Plat there. Nothing special to report there.
