If the flight is on time or up to about 30 minutes delayed it should be fine to make it through passport control and still make it to the meeting, but it would not be possible to wait for the luggage if there is any delay.

Would it be possible to pick it up later in the day (or worst case another day) if it is just left on the luggage belt?

If it is anything like Sweden, uncollected luggage eventually gets stored by the ground handling agent and you need to treat it like any other lost luggage.

Baggage claim is in a secure zone (due to customs clearance requirements), but not airside. In any case, they usually won't let you re-enter the secure areas on an old ticket as you are no longer security-checked. And security won't scan you without a valid departing flight.

In Stockholm there is a window landside that you go to and they can help you there. I think they do have something similar in CPH.

I would definitely either pack lighter to avoid a carry on (if you can) or plan to collect it when you land. Airports and airlines don't strike me as having tons of personnel these days, so you may get unlucky and this could turn into a whole giant faff. My recently Eurobonus Millionaire trip taught me that I can pack 12 days of stuff into a backpack and a carry on and still have clean clothes to spare).

Good luck with whatever you decide.
