AS 358 on 19-Jan-2025, two of us traveling together so I can show off two breakfast meals catered for the same flight.
Neither of us eats pork, but one of us needs a gluten free meal so we pre-ordered the Apple Pancakes and the Parmesan Eggs with Bacon (and didn't touch the bacon.)
I wish there was an option to hold the meat in cases like this; the waste offends me, especially where killing an animal is concerned and the relatively greater waste of animal protein vs. plant foods.
First the

A detail photo is useful for this one as the apple in these pancakes came as actual diced chunks of fruit. It was not "apple flavored" or miniscule shreds of apple. The bit of skin on one bite made me think they used Granny Smith (or some other yellow/green varietal) for the dish. I appreciated that the chunks made the dish feel more homemade and less institutional food.

Flavor of the apple pancakes was mild and pleasant. I would eat this again. I don't know that I need apples in the pancakes to make me like the dish, but I think most people like more exciting food than I do and can see how apple pancakes sound more exciting than buttermilk. I don't usually eat syrup (because I'm so happy with bland food like plain or buttered buttermilk pancakes), but I tasted this syrup for you guys. If the syrup was also "apple flavored" I couldn't tell. It was either regular maple syrup or possibly had a hint of cinnamon to complement the apples; that hint of cinnamon may also have been in the pancake, or I could have imagined it. In the end, I'd say this dish leans toward the innocuous not the highly flavorful, but it made a fine breakfast for someone like me who doesn't want stimulated taste buds in the morning.
The eggs were cooked decently for a tray meal, but they weren't nearly as tasty as the Parmesan eggs in my family member's meal. (I remembered liking the Parmesan eggs better, and stole a bite from my kid to confirm they were better yesterday, too.)
I've had chicken sausage on AS before, and took one bite of these before giving my voracious teen the rest (since he couldn't eat his own bacon.) These aren't my favorite type of poultry sausage (that would be Applegate Chicken & Maple), but they're perfectly edible.
I ate my roll and it was fresh with good texture, but I hate the inclusion of nuts and raisins. Plain bread would make me happier. Yup, I like my meals that bland.
The fruit portion felt skimpy (didn't fill the bowl in an attractive way), but all the elements were fresh and tasted as good as they should.

Since my kid doesn't eat pork or gluten, the meat and roll were left untouched on this tray. He was satisfied with the eggs and potatoes, but happier when I gave up my chicken sausage.
He had no other comments about his meal, except that I spend too much time on FlyerTalk, then he put his headphones back on and went to sleep so he could ignore me better.
