Years ago, the SeaTac Hilton offered a superb steak house called Spencer's. (I believe the restaurant is still called that but it is nothing like its former self). It actually was good enough to compete with downtown Seattle's premier steak house, the Metropolitan. When we had morning flights out of SeaTac, we would actually stay at the Hilton just for dinner at their restaurant the night before. About 15 years or so ago they started their decline ....changing the menu (what steakhouse doesn't offer baked potato?) and becoming mediocre at best. Glad to hear they may have upped their game a bit from their decline.
