I think this is the main point. If they wake everyone up before start assembling the food, the service would be excessively long regardless of the current style of Carfield's preferred style.

I prefer the three-course breakfast/light meal service, which makes more sense, back then!
Lights on --> hot towel --> juice/smoothie/water --> delivery of starter tray with fruit plate --> breads--> yogurt/cereal/hot beverage trolley--> main course trolley/delivery--> more tea/coffee --> collection of trays
For light meals, they do lights on --> hot towel --> chilled beverage --> delivery of starter tray --> breads --> wine/beverage trolley --> main course trolley/beverage --> dessert/tea/coffee trolley
I honestly don't mind CX using the casserole for main courses on the second meal. You are already short staff and trolley makes the service more efficient.

I myself prefer the current service style. Really hate trolley service, unhygienic and impersonal. And just reading all the differnt steps of your preferred service makes me dizzy (LOL), why need the crew to deliver juice/fruit/breads 3 times separately? Then 2 rounds of trolley? That would take forever!
I would rather sleep more than have the "sense of ritual" of an elaborated multi-courses breakfast. I believe that's what most long haul passengers wanted, hence we have the current service flow. If crew continues to wake up everyone before food is prepared, with your service flow everyone would be waken up an hour earlier than now.
