I'm perfectly willing to use EVA or China Airlines but I won't pay a 20-30% premium to do so, especially when I have always been impressed with ANA and its service. The only way Taiwanese carriers (including Starlux) are going to make a bigger impact is by offering better value on transpacific flights. That simply isn't happening at present.
They use to offer better deals than the Japanese but they have been very pricey since COVID (primarily due to not enough flights and demands between China and US, so everyone is capturing that part of the market with a premium). They were never in contention against the Koreans (Koreans were almost always cheaper).
EVA has some ludicrious routes such as IAH and YYZ that they simply don't need to offer too much discounts even for transit passengers. This might change in the future for IAH, though. NH serves HND-IAH, which doesn't offer as many connections to SEA (and timing isn't great). KE serves ICN-YYZ daily since 27OCT24 (was 5-6 weekly). CAL is just plain more expensive, which has changed on certain routes (SFO) where there are too much competitions.
SJX sure can capture some markets off the East and South of US, we will see what happens when they enter the market.
