The irony is that the new "breakfast" service is just an one-tray service but requires the F/As to assemble the tray in the galley. It is more inefficient and you get less food. It makes zero sense.
I prefer the three-course breakfast/light meal service, which makes more sense, back then!
Lights on --> hot towel --> juice/smoothie/water --> delivery of starter tray with fruit plate --> breads--> yogurt/cereal/hot beverage trolley--> main course trolley/delivery--> more tea/coffee --> collection of trays
For light meals, they do lights on --> hot towel --> chilled beverage --> delivery of starter tray --> breads --> wine/beverage trolley --> main course trolley/beverage --> dessert/tea/coffee trolley
I honestly don't mind CX using the casserole for main courses on the second meal. You are already short staff and trolley makes the service more efficient.
Carfield
