As soon as the clock ticks over, the flight closes, and it's much more work (but certainly not impossible, as you stated) to get the bags checked.
But even ignoring the bag deadline, I don't understand why you weren't allowed to board at T-20, unless the original check-in agent had offloaded you, so they closed the doors after all checked-in passengers had boarded.
The transfer desk person said that I hadn't made it through security in time (I think I made it through between 8:25-8:30), so I was offloaded from the flight as I wasn't yet through security. Partner and I had never heard this before, but maybe it's a thing?
EDIT: Not sure if the fact I had included 1 checked bag during the online checkin impacted the offloading.
