(Related to OP: my passport was "DOCS OK" verified as of my last international check-in. The mobile app check-in workflow included the doc verification (photographing the passport). I believe that the issue with a "verified" passport not retaining its "verified" status has to do with how the desk agent handles the passport upon checking in (at the baggage counter). Swiping via check-in kiosk processes the passport properly, thereby allowing it to remain in "verified" status. But not all desk agents do whatever they need to do on their end. (I'm speaking from memory here; details aren't precise.)
Your experience matches mine. About two years ago I checked in at the counter (rare as I typically do only carry on), and I noticed that after I did so, my profile in the app changed to "Not Verified" in yellow. Struck me as a bit strange as I would have thought that if anything would make the passport verified, an interactive check-in with a live agent would do it. The flight itself proceeded without incident. The only way I was able to get my profile to change back to "Verified" in green was to check in at a kiosk again for my next international flight.
