Perhaps I will just leave the airport and grab a bite at Filiberto's (don't know the city at all...any recommendations?)

Re:Filiberto's - On days which I fly, I do not want something so heavy. Many phoenix eateries have HM Host operated eateries in the terminal, there isn't one that stands out to me. If you were really looking to get out of the airport, I would recommend https://www.comedorguadalajara.com/ for Mexican or a Chicken Shawarma plate from https://sites.google.com/view/haji-baba/home/

My one visit to the Escape lounge 18 months ago was pleasant. Food was superior than the current Sapphire offerings, though I would give Sapphire the nod in terms of wine selection and cocktails.

Assuming the discrimination holds, if you have a CSR, you'll be able to get in a reasonable time. IMO Priority Pass holders should not anticipate being able to use their benefit in the Phoenix lounge. My apologies. The square footage that Chase knowingly contracted in ~2021 is miniscule for a hub airport. The design, layout, and inefficient usage of the space is deplorable and inexcusable when you factor in easily perceivable demand.
