Been a while since this post but will write my experience for future readers. In my experience, they only require a passport from the lead guest. This has been the same everywhere we've stayed in Oman so far. So no one will know if you're married or not and for that matter if questioned you could just say you are regardless, having different surnames isn't particularly uncommon. If they asked tor proof, It'd only be from Muslim couples (and even then I'd suspect only those with passports from the region), at least that's the norm across the entire gulf region in international chain hotels.

In Abu Dhabi they did scan both passports as required by the UAE government but didn't ask any questions.

I've traveled with an unmarried partner in quite a few middle eastern and north African countries and never been asked once about our status, but it's mostly been in hotels under Marriott, SPG, Hilton, or Wyndham brands. We did go stay in a desert camp this time and again the staff wasn't interested in our status one bit.
