I regularly stay multiple nights at ryokan. I find that it gives sufficient time to enjoy and relax. Nearly all ryokan are used to multi night guests. Fufu Kawaguchiko had 5 different menus to accommodate guests staying up to 5 nights with no repeating dinner and breakfast. Fufu Nikko has a teppanyaki restaurant that we enjoyed on our second night there. As between the two we preferred Fufu Nikko for more interesting design and complimentary happy hour but Kawaguchiko’s rooms do actually have outdoor onsen with Fujisan views.
Thanks, exactly the type of specific input I was looking for. Have only done one-nighters in the past and a little hard to decipher the menu options.
