A lot has been said already, but IMHO, 1 full day is plenty to cover all the main DOH sites. No way you'll be rushed in 2.5 days.

The Museum of Islamic Art is excellent, but it's a fairly small collection. This isn't the Met (NY) or British Museum or anything.
