There are undoubtedly some absolute gems, but as others have said there’s so much inconsistency.

I flew JFK-LHR on the daytime flight recently, in WT for the first time and it seemed like the crew didn’t know the service flow. They brought out the breakfast, and said tea and coffee was to follow. A while later, with no tea/coffee served they began to collect trays - someone asked about drinks and the crew said they were “doing it differently” today… About three rows of trays were collected then they abandoned, saying “change of plan” and went back to the galley to bring the tea and coffee out, after which they then collected the trays.

It was a smooth flight the whole way so wasn’t a case of weather impacting service flow. A bizarre experience and it definitely didn’t feel professional.
