I fly Icelandair Business Class (Saga) and find it fine, especially given the pricing. I knew before I booked the seats were not lay flat, though so I never had an expectation of this. I like the gin menu

and find the food as good as any airplane food (except manybe Turkishair!). It is about expectations. The proper comparison is not to First Class on a U.S. based airline but to premium economy. I like having the stop in KEF, even though it can be hectic at times. It's a nice break in the middle of the long flights and the airport is clean.
I'm sorry they misinformed you about the seating.
