Exactly! I've never seen an instance where the pilot forgets to let the FA's know that it is safe to get up and the FA sits for several hours. I assume the FAs value their own safety. If it were truly unsafe, why would they risk it to go chat with a coworker.
Sure, FA's have some extra training on how to deal with a severe turbulence event and brace themselves or get on the floor, but who knows how much difference it makes in practice when it can come out of nowhere while their hands are full.
