The following thread is a good place to glean insights on dealing with AF on that front, but it seems like the OP already has a good handle on things.
Compensations for Cancellations/Delays/Changes - EC 261/2004 MASTER THREAD for AF
moondog is of course correct, I had just woken up and was focussing on the costs that
Rimmit is no doubt incurring now to rearrange travel and that was the focus of my thoughts. However the EU261 duty of care is scoped to the direct consequences of disruption to an EU261 protected journey. If
Rimmit has broadly walked away and is rearranging their travel now then any AF duty of care to support that journey is less clear cut, and may be one for insurance. The devil will be in the detail.

Any idea what people tend to use to file a valid insurance claim?
Let's not clutter up the TWOV thread with too much more detail here, but the key thing here is that insurance will expect you to use any T&C's, EU261 or DOT leverage against airlines or other contracted providers of services first, and then insurance stands behind that to pick up any costs you are reasonably unable to recover from elsewhere including consequential losses subject to all the weasely words in their own T&C's.
I suggest you get on and enjoy the delights of Disney in December, once you are back home take a deep breath, document what happened and then maybe pop back into this thread to signpost another thread where you have posted more detail, maybe the AF EU261 thread
moondog signposted above.
