Your first point of call should be trying to get AA to add on an OVD-MAD flight to your award ticket. It won't cost you anything.
If AA can't do that - they might need award space for the whole OVD-MAD-DFW itinerary at the time of changing the award - then you need to leave 4-5 hours to collect your bags and re-check them before check-in closes for MAD-DFW.
FWIW OVD airport is in the middle of nowhere. To avoid a ridiculously early start from Oviedo city, you might want to fly up to MAD the night before.
