Once you cancel to wallet the funds cease to be from the credit card and are just wallet funds. If you want to avail yourself of the credit card bag benefit then you must charge at least some amount (even just a dollar) of the new ticket you are purchasing to the credit card.
The problem could be that AS doesn’t actually allow you to choose how much wallet credit you want to use. If you bought $500 in Costco giftcards and dumped them all into your wallet, buying a $250 ticket with $249 credit and $1 charged to the AS Visa can5 be done directly. What you’d have to do is book a dummy flight for, say, $251 bucks with wallet credit, then book your $249/$1 flight, and then cancel the $251 flight for wallet credit.
