If you look at the fare classes for all the BA LHR-JFK flights on that day, the ones at £560 are T class (Premium economy discounted/restricted), and the £2,006 ones are W class (Premium economy flexible/full fare)

The Business fares are R and I class, which are discounted/restricted.
