This is correct that GE 2.0 no longer has questions on screen to make declarations. Furthermore, most exits to the customs hall now allow passengers to just walk out.
In this case - or in any case where I have declarations that would have been a yes answer to the goods/limits questions - I would seek out the duty desk in the customs hall. I would also start with declarations that would be more of interest, such as, "I've exceeded my duty free allowance. Where is the duty desk?" At the duty desk, USCBP can decide whether or assess or waive duty.
It's not ideal compared to the previous setup, and it places more responsibility on the GE member to be proactive in terms of declarations.

The CBP (as well as several other law enforcement agencies) have some extremely well-trained K-9s that detect all sorts of things (currency, various agricultural products, etc). It is your responsibility, as a trusted traveler, to declare everything. Remember this is truly a zero-tolerance program.
