As a follow-up for any celiacs out there, after talking with the helpful flight attendant I did eat the Black Bean Burger and had no problems at all. As far as gluten free food goes, I found it acceptable and appreciated that the trimmings for the burger were kept separate (I have an intolerance to tomatoes, so it was helpful that it was not placed on the burger directly).

In sum, I had no complaints with the meal and had no negative reaction even though I am celiac and sensitive to trace amounts of gluten.
